Oatmeal Pancakes
This oatmeal pancake recipe is made the day before you use them and make some of the most filling oatmeal pancakes you will ever eat. These are health oatmeal pancakes because of the extra fiber from the oatmeal and the raisins are optional. This recipe does make yeast free oatmeal pancakes for those of you who are yeast intolerant. I hope that you enjoy this oatmeal pancake recipe and use it often.
Ingredients:
2 Cups Old-Fashioned Oats
2 Cups Buttermilk
2 Eggs
¼ Cup Butter or Margarine, melted and cooled
1/3 Cup Dark Seedless Raisins
½ Cup All-Purpose Flour
2 Tbl. Sugar
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Ground Cinnamon
½ tsp. Salt
Directions:
Mix oats and buttermilk in a large mixing bowl. Cover and refrigerate overnight.
When ready to cook, beat in eggs and butter.
Sift together flour, sugar, baking powder, baking soda, cinnamon and salt.
Add to oat mixture and stir briskly, but just until moistened.
If possible, let batter stand 20 minutes before cooking.
Heat a lightly greased griddle or frying pan over moderate heat.
Pour about 1.4 cup of the batter onto the griddle for a “test” cake. If batter seems too thick, add more buttermilk, one tablespoon at a time (up to 3 tablespoons).
Cook pancakes until a few bubbles appear on the tops; turn to brown other sides.
Makes about 18 pancakes.
Theses oatmeal pancakes are thick and hearty and very filling. They are very different from regular pancakes but our family really enjoys these pancakes. I hope you do to.
